They assertedly ate the fruit from wild cacao trees, spat the seeds (cacao beans) onto the ground, thus planting the first seeds!
Shock horror - Chocolate indubitably is good for you. Sadly that doesn't mean the usual kind. Here is a natural alternative to fat laden sweet and a salutary and natural cure for your chocolate cravings. Don't rush off to your nearest projection shop and pick up a house size block, what we're used to is not indubitably chocolate, its confectionery, faultless with cheap fillers, refined fats and sugar, dairy and flavourings.
The most natural form of chocolate is Raw Cacao which is now indubitably ready in powdered form or already made into chocolates or bars. This is indubitably a 'superfood' - one of the most complicated food substances on earth containing Seratonin, Tryptophan, Anandamide, Dopamine, and many more identifiable chemical compounds all of which have a clear effect on brain chemistry.

For chocolate lovers in any place the great news is you can now have your chocolate without the guilt and the market is growing rapidly, with masses of companies now selling exquisite raw chocolate. How much good though to make your own and to that end I was lucky sufficient to attend a Raw chocolate manufacture workshop with Raw culinary artist Amy Levin
I arrived stressed out after a long journey but immediately felt revived with a taste of a chocolate Hazelnut Praline and a Peppermint Paddy. There were 5 of us, all raw food or chocolate enthusiasts (or both) and Amy explained the tempering process, heating and cooling chocolate to prepare it for dipping and enrobing, but raw chocolate chefs use high speed blenders to melt the cacao butter, its prominent that raw chocolate is heated only to 42 degrees and then whisked, its ready for use at 31.5c
Once you have tempered chocolate you can add texture, fruits, nuts, dried fruit, indispensable oils and add it to moulds before allowing it to set in the fridge. In truth because I'm all the time in a rush I've often successfully missed out the tempering process and its still worked out fine.
We made Amy's very own version of White Chocolate - cashews, cacao butter, a vanilla pod, a tiny pinch of Himalayan salt, and it can be sweetened maple sugar or mulberries.
Milk chocolate is of policy not indubitably milk, its dairy free and uses all the ingredients above apart from the vanilla pod but adds 50 grams cashew nuts and cacao powder
Dark chocolate it's just the cocoa butter, powder, and the same sweeteners but you may pick to use Agave Syrup or Sweet free time In an activity packed day (where we advised to wear old clothes cos working with chocolate is messy!) we learnt how to make filled chocolates, along with the aforementioned Peppermint Paddys, Truffles, Praline and Ganache. We left laden with our own personal range of gorgeous chocolates and a host of recipes to generate them at home. Friends I'm off to buy some moulds - you know exactly what I'll be gifting you for Christmas! Amy Levin runs industrialized level Passion for chocolate courses in East Sussex and London and is about to kick off Raw Pattisserie classes. http://ooosharawculinaryartistry.blogspot.com/. Mint, lavender, lemon balm, rosemary and others add a nice flavor to sugar cookies, jellies and other sweet treats. You can even use scented geranium leaves to flavor sugars and cakes. Flowers like violets and rose petals can also be used to flavor sugar, cookies, and jellies.
Spices such as cinnamon, cloves, allspice, and nutmeg are traditionally used in desserts as well as savory dishes. Cardamom is an Indian spice that is often used to spice up desserts and beverages. Ginger and mace also add a bit of spice on occasion. In Mexico, they even use chilies in desserts. Did you know that hot chili blends de facto well with chocolate?
If you have never used a lot of spices in your desserts, you are in for a real treat. Spices and herbs add a whole new dimension to your sweet dishes. Anise adds a extraordinary licorice-like flavor to baked goods. If you follow the recipes being showcased in some of the finest restaurants these days, you may be amazed at the spice combinations being used in desserts.

Recipes like ice cream infused with tarragon or strawberry shortcake covered in basil syrup are all the rage. Of course, cayenne chocolate truffles and hot peppers dipped in chocolate are someone else hot item. Why not try some of these unusual combinations yourself? You will learn a lot about spices and how they interact together with sweet ingredients.
The best rule of thumb to follow when you are experimenting is to go slowly. Fresh spices and herbs are full of flavor. Do not overwhelm yourself with too much of a good thing. Add a minute bit at a time, tasting as you go. Once you find the excellent combination, take a lot of notes so you can replicate the results. Experimentation in the kitchen is a lot of fun; it is even great if you end up with a recipe you can make again.
Take care to only use the best herbs and spices you can afford. Many herbs can be grown in your own garden. Spices are more difficult, and most need to be purchased from a recommended source.
