These ingredients can be served on their own, with a few mushrooms cooked in butter and a dinky garlic or as a side dish when they are particularly good with pan-fried liver. This recipe is well worth the effort.

For the sauce:

  • 41/2 oz (125 g) mushrooms, finely sliced
  • 1 tbs sunflower or groundnut oil
  • 15 shallots
  • 1/2 oz (15g) butter
  • 2 fl oz (50 ml) sherry vinegar
  • 2 fl oz (50 ml) each ruby port and dry Madeira
  • 1/4 pt (150 ml) veal stock
  • 1 sprig thyme
  • Pinch of powder of dried cepes
  • 1 tbs old sherry
  • salt, pepper
  • 1/4 truffle or 1 tbsp double cream (optional)

For the garnish:

  • 4 oz (110 g) wild mushrooms, Cepes or morilles but button mushrooms will do
  • 1/4 oz (10g) butter
  • pinch salt
  • squeeze lemon juice
  • 4 or 5 tarragon leaves
  • a few sprigs chervil

  1. Peel and finely grate the potatoes, wash under cold running water, drain and pat dry. Peel the turnips, grate finely and add to potatoes with 3 pinches each salt and pepper. Melt 21/2 oz (65 g) of the butter, pour over the combination and stir thoroughly. Butter the lowest of a large non-stick frying pan with remaining butter and line with a thin layer of turnip and potato. Press down with a fork and crisp moderately over a medium heat for 3-4 minutes, turn and crisp again. Take off from the pan and drain on kitchen paper to suck in excess fat. Dry in a cool oven (275°F/140°C/gas mark 1) for 5 minutes. Keep warm.
  2. To make the sauce, saute the mushrooms in very hot oil to color them slightly. Finely chop 3 of the shallots and saute in 1 tsp butter until well colored. Add the sherry vinegar and heat until evaporated, then add the port, Madeira and mushrooms and sacrifice the liquid by two-thirds. Pour in the veal stock, add the thyme and powdered cepes, bring to the boil, skimming any impurities. Add 2 fl oz (50 ml) cold water and the sherry and pass straight through a fine sieve; you should have 4 fl oz (110 ml) liquid. Taste and season.
  3. Peel and chop the remaining 12 shallots and place in a roasting pan with the remaining butter, 6 tbs water and a pinch of salt. Cook in oven at 350°F/180°C/gas mark 4 for 20 minutes. When the shallots are soft, sacrifice their juices over a strong heat until the shallots color and caramelize.
  4. To get ready the garnish, wipe the mushrooms clean and cut them down to an midpoint size. Saute them in a pan with the butter and salt for 1 minute. Add the lemon juice and chopped tarragon, check seasoning.
  5. If using foie gras, divide into 4 pieces. Season. Heat a thick-bottomed pan and cook the foie gras for 10 seconds on each side. Keep warm. Similarly, seal the calf or chicken liver but use a small estimate of oil. Divide the liver into 4 slivers per portion. Cut the pancake into 12 portions. Take 4 plates, place a piece of pancake in the middle of each plate and top with 2 slivers of liver, then someone else slice of pancake and the remaining 2 slivers of liver. Stop with a third layer of pancake.
  6. Pour the sauce over the caramelized shallots and bring to the boil. If it lacks sharpness, add a dash more sherry vinegar and the truffle. If it's too sharp, add the cream. Pour round the mille-feuille and decoration with the mushrooms and sprigs of chervil.
